Christoffer Hruskova trained to be a chef in Denmark working in establishments such as the Michelin starred King Hans restaurant and opening the renowned Emmery's organic bakery and grocers in Aarhus. Craving to explore the culinary world, Christoffer travelled from France to Australia, Tokyo to South America and Cuba, San Francisco, New York and finally, London. 


In 2006 Christoffer opened Fig Restauraurant in Islington where he soon achieved a keen following. Having transported his menu from Fig to North Road in Clerkenwell, the Islington neighbourhood restaurant is now Fig Bistro.
